Summer’s here and it’s never been a better time to go RVing. All across America travelers are hitching up and finding their perfect place to get away from it all, explore the great outdoors, spend quality time with family and friends, and enjoy local culture and cuisine. An RVing/camping vacation can be a lot of fun when you’re flush but perhaps even more fun when you are on a budget. That’s the beauty of it!
Whether you enjoy RVing in the mountains, on the seashore, lakeside or even in the city, there’s always something free going on nearby. In this episode of the RV Cooking Show we’ll share some of my favorite no or low cost things to do then, back at my RV, we’ll stoke the grill and make a pocketbook friendly old-time camp favorite – steamy stuffed banana boats. Ingredients
1 firm yet ripe banana per person
Stuffing material of your choice:
dark or milk chocolate – broken into smallish chunks
chunky peanut butter
mini-marshmallows
brown sugar and honey
what’s your pleasure…you are limited only by your taste buds
Aluminum foil – appx. 1 square foot per banana
Whipped cream or vanilla ice cream – optional
How-to:
Preheat grill to high or leave grill on after cooking your meal.
Wash the banana and place on a cutting board so it lays flat. Using a sharp paring knife cut a three-quarter inch deep slit down the length of the banana – about a half inch from each end. Gently pry the slit open and stuff with fillings of your choice. Go ahead, mix and match…make it your own camping creation!
Place the banana on the foil and fold foil down to create a tent over the filling. Crimp the ends so no steam escapes. Place on a hot grill for 5-7 minutes - the more filling the longer you’ll need. This also works alongside hot coals in a campfire (8-10 minutes), in an oven (8-10 minutes) or, sans aluminum foil, in the microwave (30-60 seconds).
Remove from the grill and open the foil packet. Caution!! The escaping steam can be very hot!!!
Cut off the ends of the banana and peel back for steamy stuffed banana boat goodness. Eat as is or glam it up – add a scoop of cold, fresh whipped cream or serve with a side of vanilla ice cream.
